02/16/21 Notable Moment! - Lunch and Dinner for Bae

Updated: Mar 13, 2021

Since we had to go to that camping trip, my partner and I missed our valentines day together! So to make up for it, I tried to be nice and with the stuff I had laying around, I tried to make us a some food. Now this isn't entirely my best meal out of this month, in fact, I kinda failed today.

The first meal I made was just a simple pasta dish. But with my ever so wise brain, thought it would be an excellent idea to put some bell peppers into my pasta dish. Which, granted didn't end up that bad in the dish but wasn't entirely what my partner liked aha. Originally I was going to make just this pasta dish but my partner said that they couldn't offer anything at their house because they didn't have much options for me. So I made two dishes. The process of cooking both dishes changed. In the end I made a pasta dish with a basil and tomato sauce from Walmart, with some bell peppers and mushrooms in it. This is where I think I found out that Rotini is my favorite pasta shape because it can hold onto so much sauce in each bite. This turned out alright, and from the pictures below, it offered a beautiful shot at the dinner table. In efforts to bring Buca di Beppo into my house, I toasted some french bread and poured some olive oil to dip my toasted bread in. I would've added some balsamic vinegar but I had just recently run out, it was still amazing with the pasta and olive oil so, so far it was going pretty good.

For the Kung Pao stir fry, I learned that cooking everything separately isn't always the best idea. In an effort to organize my cooking, I fried the bell peppers, mushrooms, jalapenos, and broccoli separately then incorporate them all with the sauce at the very end. I ended up over cooking the bell peppers, so they became mushy, and under cooked the broccoli so not my proudest meal. In terms of photogenic properties. But it was still a satisfying meal, and even after yesterday I still was okay with my vegetarian diet. Felt no regrets so far.

I also bought my partner some Boba and their favorite bread at 85 Degrees Cafe, so far it was a good return to normal this week.
